🥕Carrot Cake Smoothie

Ingredients & directions

Effort/skill: Easy

➡️ 1 shredded carrot

➡️ 1/8 cup unsweetened coconut

➡️ 1-2 frozen bananas (pre-slice them before freezing)

➡️ 1 nub ginger (I had to take it out for my fussy taste tester)

➡️ 1 heaping tbsp @maison_riviera oat-based vegan greek style plain yogurt - SOOOOO creamy rich and delicious. This will give you that sense of having cream cheese icing on top! (Next time I’ll try for the vanilla version)

➡️Dash of Cinnamon to taste

➡️ 2 medjool dates, pitted

➡️ 1 tbsp - 1 cup of your favourite oat milk - make it as thick or as liquid as you wish

➡️ Optional: coconut whipped cream, cinnamon, shredded coconut, chopped walnuts for toppings

Mix all ingredients in a blender well. Add toppings if desired.
