Skin-Loving Cloud Smoothie

Inspired by Erewhon, but without the collagen

Your breakfast smoothie that looks great, boosts collagen production, and is loaded with plant-based protein!

Collagen is not vegan and the jury is still out on whether dietary supplementation of collagen is helpful in the restructuring of skin and tissue.

Instead, let’s give our bodies what they needs to boost the production of collagen, something we know that our bodies are capable of.

COOL TIP: to really make this smoothie look like a cloud, smear a thin layer of vegan yogurt on the sides of the glass. Then add your butterfly pea powder or blue majik. Pour your smoothie in layering it for a true cloudlike effect.

I love to layer smoothies with colour and it might take a bit more work, but it’s so worth it. Not just for appearances, but the flavours on top of one another really work fabulously!

Recipe

  • 1 cup organic oat milk (or your favourite plant-based milk)

  • 1 cup frozen organic pineapple

  • 1.5 frozen organic bananas

  • 1 tbsp organic cashew butter

  • 1/2 cup + 1 tbsp plain vegan yogurt (oat preferred)

  • 2 x 1 scoop Sunwarrior vanilla plant-based organic protein powder

  • 2 + 1 tsp butterfly pea powder (Blume Blue Lavender is perfect)

  • 1 tbsp saskatoon berry jam

  • 2 cups frozen wild blueberries

  • 1 tbsp pumpkin seeds, raw & organic

  • 1 tbsp sunflower seeds, raw & organic

  • 2 cups of ice

  • 1 cup water

  • yogurt for lining the glass

Directions

  1. Blend 1: In a large blender, add the oat milk, cashew butter, 1 scoop of protein powder, 1/2 cup yogurt, banana and seeds. Blend well.

  2. In glass smoothie cups, smear yogurt on the inside of the glass.

  3. Pour the first blend into the bottom of each cup. About 1/3 full.

  4. There might be some smoothie from blend 1 left, add blend 2 ingredients to this.

  5. Blend 2: add the blueberries, saskatoon berry jam, 2 tsp butterfly pea powder, pineapple, and some of the water (if needed) to the blender. Blend well.

  6. Sprinkle 1 tsp of the butterfly pea powder to the inside of the glass where the yogurt lines the glass.

  7. Pour blend 2 over blend 1.

  8. Blend 3: Rinse the blender if needed and add the following: 1 scoop protein powder, ice, water, 1 tbsp yogurt.

  9. Blend really well. Add blend 3 to the top of the other two layers. Enjoy watching the layers swirl together.
