Tofu breakfast scramble

Ingredients

  • 1 block extra-firm tofu, crumbled

  • optional: 1 tsp avocado oil

  • 1 tsp onion powder

  • 1/4 cup nutritional yeast

  • salt & pepper

  • 1/2 cup chopped green onions

  • parsley

Directions

  1. Start by crumbling tofu into a small bowl using your hands, ensuring to leave some larger chunks.

  2. In a medium-sized saucepan over medium-high heat, add oil if necessary. Gradually incorporate the crumbled tofu.

  3. Introduce green onions and spices into the tofu mixture, cooking until done. Sprinkle with parsley for a final garnish.
