Mayan-inspired Vegan Chocolate Ice Cream

Ingredients

  • 1 x 14 oz can of full fat coconut milk

  • 1/4 cup cocoa powder

  • 1/4 cup maple syrup

  • 1 tsp cinnamon

  • Pinch of cayenne

  • 1/4 tsp salt

Directions

  1. In a blender, blend all ingredients well until smooth and pourable.

  2. Pour the mixture into a parchment lined 8 x 8 pan or loaf pan. Cover tightly with plastic wrap.

  3. In 4 hours, you should have a firm ice cream that’s ready for scooping.

  4. Scoop and enjoy in a cone, bowl, or top it off with some coconut flakes and a drizzle of melted chocolate.
