Prairie girl’s Dreamy Chocolate Vegan Ice Cream

This is my go-to chocolate ice cream recipe because it’s easy, satisfying and indulgent without all the added work.

Estimated time: 3 hours (includes chill time)

Effort/skill: Easy

Servings: 2

  • Ingredients

  • 1 cup of oat milk

  • 1 shot of espresso

  • 1 tbsp cocoa powder

  • 1 tsp maple syrup

  • 1/2 tsp vanilla

  • 1/4 cup oat milk

Directions

  1. Blend 1 cup oat milk, espresso shot, cocoa powder, maple syrup and vanilla together. Freeze in cubes for at least 3 hours. I use an ice cube tray that’s easy to remove the cubes.

  2. Once the cubes are frozen blend the frozen cubes together some oat milk and enjoy it in a bowl or cup.

  3. If you’d like a firmer ice cream, return the mixture to a covered small container and freeze for 4-5 hours. You can substitute a dark stout beer shot for the espresso, if you’re not into coffee.

  4. Scoop and enjoy.
