Lemon Loaf Smoothie

Who doesn’t love a little sunshine in their cup?
It’s lemons that make me smile. I can smell one and my joy meter rises, or I diffuse lemon oil with a touch of vanilla in the winter for a smackering of lemon loaf scent, without the labour of baking.
This recipe gives you that joy too! Sunshine in a cup. Lemon loaf is a much-loved savoured recipe, so why not make this 5-minute version in smoothie form?
Beat the winter blues with an immune-boosting lemon. These sunny vitamin-C-rich citrus fruits, not only support your immune system but add fibre and flavour to your meals. If you can stomach eating one a day, you’ll meet 50% of your daily vitamin C requirement.
But I’m going to guess that a juicy lemon is a bit too sour for most of us. So, try adding a wedge to your smoothie (use a heavy-duty blender for this one), top off your green tea with a wedge (and some ginger for heat), make your own lemony hummus, or buy/make a jar of preserved lemons (you can thank me later).

INGREDIENTS
1 banana - frozen into slices or fresh
1/2 cup crushed ice
1 scoop vanilla protein powder
1 pitted medjool date
1 lemon wedge
1 tbsp lemon zest (or use dried lemon zest powder)
1/3 cup oat milk or water - adjust as needed
2 tbsp vanilla or plain oat/coconut/soy yogurt
1 tsp hemp seeds
Directions
Crush ice ahead of blending other ingredients.
