The World’s Creamiest Hummus

Ingredients & directions

Hummus

  • 398 ml can organic chickpeas

  • 1/2 tsp baking soda

  • 4 cloves garlic

  • juice of one lemon (2-3 tbsp)

  • 2 tbsp organic tahini

  • 1 tsp cumin

  • 1 tsp chili powder

  • 1/2 tsp salt

  • 2-3 ice cubes or 4-6 tbsp ice water


Toppings

  • drizzle olive oil

  • 1 tbsp pine nuts

  • 1 tbsp sun-dried tomatoes

  • optional: sprinkle of sumac

DIRECTIONS

  1. Drain and rinse a can of chickpeas.

  2. In a medium saucepan, boil 4 cups water. Add baking soda. Add pre-rinsed chickpeas. Boil well until the coatings separate from the beans or once very soft, about 15-20 minutes.

  3. Drain & rinse chickpeas and let cool.

  4. In a food processor, add cooled chickpeas, garlic, lemon, tahini, spices and blend. Add ice cubes and blend again.

  5. If the mixture is very sticky, add more ice or ice water.

  6. Once it’s super creamy, scrape into a dish, drizzle oil, nuts, seeds, spices over the hummus.

  7. Enjoy with your favourite veggies, in a wrap, use inside a grilled “cheese” sammy, or with your favourite seed crackers.
