Chewy Chocolate Oat Bars

Craving chocolate? Well, here’s a chocolate bar you’ll never feel guilty about.

I decided to create a functional chocolate bar loaded with soluble and insoluble fibre. Why not add in the nutrition and still enjoy the chocolate. Chocolate in itself is a delicious way to get in some antioxidants

Adding in tahini, nuts and seeds will get you some omega-3s, great for lowering inflammation and brain health.

If you’re not sure about if chocolate is healthy, I can assure you it’s healthy, unless you’re eating it all day, every day.

Ingredients & Directions

Estimated time: 15 minutes + 1 hour freezing time

Effort/skill: EASY

Servings: 8-10

INGREDIENTS

  • 1 cup rolled organic oats

  • 2 tbsp cocoa

  • 1 tbsp instant coffee powder

  • 1 tsp vanilla

  • 4 dates (soaked in hot water)

  • 1/4 cup tahini

  • 1/2 tsp salt

  • 1 tbsp chia seeds

  • 1/3 cup raw almonds

  • 1/3 cup + 3/4 cup chocolate chips (vegan)

  • 1 cup extra creamy oat milk

  • salt and almonds for finishing

DIRECTIONS

  1. Soak dates in dish of hot water for 5 minutes.

  2. Add oats, dates, tahini, vanilla, cocoa, coffee powder, salt, chia seeds, almonds to a food processor.

  3. Once you have a sticky dough, fold in 1/3 cup of chocolate chips.

  4. Knead the dough, and cover with parchment paper. Roll flat with a rolling pin, ensuring the parchment paper and rolling pin make contacts so the sticky dough doesn’t get stuck on the rolling pin.

  5. In a small saucepan, over medium heat, add the oat milk to the pan and heat until it begins to simmer.

  6. In a small bowl, add 3/4 cup of chocolate chips. Add the hot oat milk over top, whisking until smooth.

  7. Spread the ganache over the oat/date base.

  8. Top with almonds and salt, or other toppings you wish.

  9. Place in the freezer for an hour.

  10. Remove the slab from the freezer and cut into bars. Store in the freezer for 2 weeks, or fridge for up to 5 days.
