INGREDIENTS

  • 6 medjool dates

  • zest of 1 lemon or 1 tbsp lemon zest powder

  • 3 tbsp almond butter

  • 2 tbsp pumpkin seeds

  • 1 scoop vanilla protein powder

  • splash of oat milk if needed

  • powdered sugar & lemon zest for dusting - optional

Directions

  1. Add all ingredients to a blender.

  2. Blend well until the mixture looks smooth and easy to shape into bites.

  3. Roll into bites or small balls. If you wish, use a silicone mould to form the bites.

  4. Place in the fridge to cool.

  5. Roll in powdered sugar and lemon zest for dusting. This gives them a more pleasant appearance, but will increase the sugary sweetness! You can also try dried oat milk powder or coconut milk powder for dusting.
