Hawaiian No-Fry Stir-Fry

Ingredients & Directions
1 green pepper, chopped
1 small onion, chopped
2 cups cherry or grape tomatoes
1 head of broccoli, chopped
2 cups of fresh pineapple, cubed
12 large white mushrooms, chopped
2 garlic cloves, minced
¼ cup tamari
¼ cup rice vinegar
1 tbsp maple syrup
½ package of brown rice vermicelli
1 tsp sesame oil
1 tsp rice vinegar
Preheat your oven to 425F and start cleaning and chopping your veggies. Place the pepper, mushrooms, onion, pineapple, garlic, tomato, broccoli in a roasting pan. Add the tamari, rice vinegar, maple syrup to the veggies and toss well. Place in the oven,and bake for 20 minutes, flipping occasionally. Roast the veggies at 450F for an additional 10 minutes.
Boil a pot of water and add the brown rice vermicelli. Turn off the element and let the noodles sit in the hot water for 3-5 minutes. Drain and toss with oil and vinegar.
Serve the rice vermicelli with the veggies on top. Add tamari if desired.
