Cali Cauli “Steak”

California….California….cauliflower….mmmm….fibre!

Preheat oven to 400 F

Ingredients

Cali Cauli Steaks
1 head of cauliflower
1 -2 tbsp olive oil
1 tsp dried thyme leaves
1 tsp dried oregano
1 tsp dried basil
1 tbsp sunflower seeds, raw and unsalted
salt
pepper

Remove the stem and leaves of the cauliflower head. Lay it on its side and with a large knife, slice into “steaks” roughly 3/4” thick. If they break don’t panic keep going. The smaller pieces are still edible.
Place the slices on a parchment paper lined baking sheet. Drizzle oilve oil and spices on the “steaks”. Top with seeds. Bake for 15 minutes or until they start to brown. Turn and bake for another 10-15 minutes..

Green Goddess Sauce
1 avocado
juice from 1/2 lemon
1 tbsp water
1 tbsp olive oil
2 garlic cloves
dash of salt
dill or fresh herbs

Add peeled and pitted avocado with lemon juice, water, oil, garlic, salt and herbs to a blender. Add more water to thin out, if desired. Blend until smooth.

Top the cauliflower steaks with some Green Goddess Sauce. Serve with greens and brown rice.

Aside from being high in fibre, low in calories and a good source of vitamins C, K, B6, folate and potassium, cauliflower contains antioxidants.

Cruciferous veggies like cauliflower contain substances known as glucosinolates. These sulfur-containing compounds go to work in your gut once you’ve digested them. Don’t let the long name fool you, glucosinolates get into your gut and attach themselves onto what doesn’t belong in your gut and “evict” them from your gut. It sounds worse than it is. Really.

When you eat a high-cruciferous vegetable-dominant diet, these little worker dudes (glucosinolates) get the bad bacteria out and make room for the good gut bacteria. They’re the “bouncers” of the gut, they’ll escort the baddies out so they can find a new place to go and make room for some good gut fun.
